Course unit content

The course aims to provide the knowledge to understand the animal production sector (meat, milk, fish and eggs). The course describes the main aspects related to animal farming influencing the commercial and nutritional value of meat, milk, eggs, fish and their derived products. The course also describes the main quality traits of animal products in relation to the current food legislation. The course is organised into 4 modules: Quality traits in animal production, quality of meat and fish products, Lab. quality traits in animal production, and Lab. of quality of meat and fish products. The "Laboratory" modules focus on several topics discussed during the class lectures. For further details, please read the syllabus of each individual module.
