Course unit content
The supervisory and control activity according to the D.G.R. 200/2013, using the quality method. Description of tools: control manual and checklist. Application of quality manuals, what are the areas of investigation: authorization title, structure, systems, personnel, pest control, product processes and equipment, cleaning and sanitization, self-control. What are the inspections for the purpose of health protection. Indications on methods for identifying risks, placing critical points under control and implementing corrective measures
